Healthy Snacks for Someone with Lyme Disease

In this post, I'll be sharing some of my favorite foods to eat that support my immune system and entire body with Lyme disease.

Fruit bowls

Pretty much everyone with Lyme knows that fruits and vegetables are the best things you can eat, but I like to make it tasty with adding a dipping sauce like peanut butter, honey, or a low-sugar whipped cream. If you can't have dairy, honey will be your best option.

I like to fill my bowls with apples, strawberries, blueberries, and bananas. It gives me energy for a few hours and gives me the vitamins and antioxidants that I need to fight off Lyme. Eating a colorful diet is what you're looking for, and this is one of the best choices if you have a lot of food restrictions-especially a gluten free diet.

Açai bowl

Açai bowls actually have more benefits than I ever imagined when I figured out one day that it can protect cells from damage and promote heart health. There are also many nutrients and antioxidants in this as well, and it tastes like a sour berry smoothie bowl to me. If you have Lyme, you'll definitely want a tasty snack like this during your week that will protect your cells and your heart.

Peanut butter banana cookies

I kind of came up with this on my own when I went through a time recently where I couldn't eat eggs, gluten, or dairy altogether. I mixed a mashed banana, 3/4 a cup of peanut butter, 3/4 a cup of oat flour (I usually buy organic oats and blend them), 1/4 a cup of organic maple syrup, and a few pinches of salt. I bake this in the oven for right at 15 minutes, and it usually makes me 8-9 cookies.

I like this recipe because it fills me on days where I feel sick of fruit and vegetables, and it doesn't have dairy, gluten, or eggs in it, which is near impossible to find out!

Homemade oatmeal

I've gotten into a habit of making my own oatmeal from scratch, and found that I felt much better eating homemade oatmeal than store-bought oatmeal bags (avoiding those body aches). You can cut out at least 80% of the ingredients put in store-bought oatmeal by making it at home, and it only takes around ten minutes!

This is dairy, egg, and gluten free as well, and all you need is a cup of oats, a banana, and either 1/2 a cup of almond milk or 1/2 a cup of water.

I get a small saucepan out and fill it with the oats first, then the liquid. After that, I mash half of a banana and place it in the pan before putting it on medium heat. (If you don't want sliced bananas on top of your oatmeal you can put the whole banana in the pan and reduce the liquid milk/water).

I like to add apples, strawberries, blueberries, cinnamon, and/or bananas on mine and create multiple flavors with it. It's a good and healthy snack or breakfast meal!

Fruit and Vegetable Juices

This one is a lot harder to make, but if you have a juicer, this is the best thing for your body if you have Lyme disease or any other autoimmune disease in general. A lot of people still don't recognize the crazy amount of benefits that juices offer- you're basically drinking bowls and bowls of fruits and vegetables, in terms of their nutrients.

These combinations are my favorite:

  1. Apple, pineapple, carrot, spinach, orange, lemon

  2. Strawberry, carrot, orange, spinach

  3. 100% celery (known to fight off any infection very well)
